Asparagus Delight!

Way back in the day, Dining With The Duchess: Making Everyday Meals A Special Occasion, was one of my favorite cookbooks. I particularly enjoyed the herb biscuits, cheese popovers, and the Parmesan asparagus. I decided to break the book out and do a little veganizing!

The recipe is originally as follows:

1 lb. asparagus
2 t olive oil
1/4 t salt
1/4 t pepper
1/4 c Parmesan cheese

Preheat oven to 425. Place asparagus on a nonstick baking sheet. Drizzle with oil and sprinkle with salt and pepper. Toss to coat. Bake ten minutes, then toss again. Sprinkle with cheese and bake about five minutes longer.

Soooo..here's what I did instead, which was awfully easy and yummy.

Leslie's version:

1 can of asparagus
1 T vegan butter
1 T lemon juice
1 T nutritional yeast
8-9 black olives, sliced
salt & pepper

In a small pan, heat the butter, lemon juice, nooch, s & p. Whisk or stir together till smooth. Add the asparagus and olives. Heat till nice and warm. Eat. Be happy!

P.S. You could be all fancy and use real asparagus and some version of these ingredients in the oven like the real recipe too :)
