I made the Jerk Seitan and Coconut Rice (can't remember the actual name of the rice recipe). I also made some kale as a side. I was really sad to have used half my batch of delicious seitan in this wonky recipe. Poops! The rice smelled great, but didn't have a great taste.

The kale rocked as usual. I used to follow the recipe below from Dr. Ben Kim, but now I just tear up the leaves, wash them, and sort of steam them with some minced garlic and home made veg broth until the liquid is gone and the kale is tender. Yum!

Healthy Meals
Ingredients:
1 bunch of kale, washed and chopped into bite-size pieces
1 yellow onion, sliced
1-2 cloves of garlic, minced or finely chopped
2-3 tablespoons of extra virgin olive oil
Juice of 1/4 lemon
1/2 cup of vegetable broth or water
Sea salt and pepper, to taste (optional)
Directions:
Warm olive oil over medium heat in a large pot or pan. Add onions and cook for 3-5 minutes or until slightly translucent. Be sure to stir the onions around once in a while so that they don't burn.
Add garlic and kale and mix them together with onions. Allow garlic, kale and onions to cook for one minute, then add vegetable broth and cover pot or pan for 4-6 minutes. Check kale from time to time starting at the 4 minute mark for tenderness.
Once kale is tender, add sea salt and just a few drops of lemon juice. Give it one last stir and serve.
Be sure to taste as you add lemon juice. Adding too much can turn the whole dish sour.
We enjoy this dish with avocado and a bowl of brown rice or quinoa.

i'm so sorry about VWAV. for the record, i don't like everything in that cookbook, there are just a few recipes that i really love. for example, i didn't like the pumpkin seed crusted tofu by itself, which is why i made that cranberry pecan sauce. i didn't like the tofu scramble, but that's because i'm a snob and only like my own. i really like the desserts the best.
truth be told, i like sarah kramer's books better, but she doesn't show any food porn in her books which can be frustrating. i want to see how the food is going to look!
You have to make the Spinach and Chickpea Curry from this book AND the Ginger Cookies. Both are awesome.
Don't bother with the Chocolate Chip Cookies though - the recipe is all wrong.
Apart from those three things I've not made anything else from this book.
I LOVE the jerk seitan. Its one of my favorite recipes from that book. I haven't tried the coconut rice. But I'd probably like it too. To be honest, I'm not very picky. I like almost everything I've ever tried...almost (I did have a bad experience with a peanut butter, banana, and tempeh bacon sandwich last week...but that's to be expected, I think).

I really like VWaV, it is one of my favorite cookbooks. I think she has a definite style though, so if you don't like her style, I could see you not liking the recipes. I adore the mushroom gravy...I could put it on everything.
I'm with Jeni Treehugger, both those recipes are awesome! I've also made muffins from her book, and even though I changed them so much that they should have tasted like an old shoe, they came out awesome.

Ooh I lov your blog! How did I not know about it before???
I like VWaV, but not as much as Veganomicon. The Black Bean, Mushroom and Quinoa-Stuffed Peppers were good if you like mushrooms. The Potato-Asparagus Soup was good (with less lemon), but you could substitute broccoli or some other veggie for the asparagus if you like. The Carrot Bisque was a nice, thick, naturally sweeter soup. The Fronch Toast gets rave reviews, but I haven't tried it yet. I didn't like the Asparagus and Sun-Dried Tomato Frittata much, though.
Sorry you're not clicking with VwaV. I quite like the book but I have others I prefer.
I was gonna recommend the same two vwav recipes as Ms Treehugger!! :) I also love the chickpea gravy and the chilli recipe in there is fab.

Sorry to hear vwav isn't working for you. I've managed to make everything in the book. Not everything has been awesome but there is definitely some yummies. The carrot bisque is super yum. The breakfast stuff is tasty. There was a chocolate rum pie of some sort in there that I recall was delectable, rich but goooood.
I've only had VWaV for a month, and so far it's been sort of hit or miss for me, although I haven't honestly made all that much from it. I tried the Breakfast Veggie Chorizo this morning, and it was pretty good in a breakfast burrito with taters, green peppers and some ketchup, but since I don't really eat much faux meat I don't really have any point of comparison taste/texturewise. :-\
