Cooking Adventure: Pho Soup and Spring Rolls

Last week I helped my friend Melanie, possessor of a doctorate of some magical jigowatt science (for real!) and lover of ethnic cuisines, make a homemade Vietnamese meal. It's NSFV (not suitable for vegans, heheh, I think I am funny at least...) as there are shrimp present, but the artistry still stands for all home-cooks!


I made the soup and Mel constructed the rolls, as my past experience with spring roll wrappers ended in doom and destruction. I do however, excel at chopping, stirring, and cooking!
Here are the spring rolls in process and finished. Perfect, right?! I am way to impatient to do that.

I've never had pho, but my non-veg friend Tim is obsessed with it. I'd like to try a veg version to see what the fuss is all about.

Beautiful spring rolls, very impressive. I've never tried pho but I've heard such amazing things I will have to give it a try soon.

Depending on where you live you may be able to find a pho restaurant that serves vegetarian versions of pho.
