Tofu Jambalaya



Today's feature is on an easy and yummy recipe from Fat Free Vegan: Tofu Jambalaya. This was a low maintenance recipe that tasted good. It would freeze great for little happy winter days where defrosting is all you wanna do for a hot meal.



I am in love with frozen and thawed tofu...it's so spongy and porous! Below is the finished dish in my lovely "new" Pyrex snowflake dish!

i haven't had jambalaya in forever! i'll have to give that recipe a try. hers are always soooo good :)

That looks AWESOME! Perfect cold weather meal. And you are right, frozen and then thawed tofu has such a great texture, it is my favorite way to use tofu. I love your pyrex bowl, anything with snowflakes is alright by me!

Yum! I love me some jambalaya. And I'm loving that snowflake dish. Makes me kinda okay with the idea of winter coming soon...as long as we can serve our food in awesome vintage snowflake Pyrex, the cold weather seems bearable.
