Polenta Lasagna

I haven't had as much cooked food lately due to the abundance of salads...as well as the vast bounds of my laziness! It's so much easier to munch on some raw veggies than to make a whole meal with ingredients and stuff!

My need for yummy warm food got the best of me though. I fired up the saute pan and and got some onions and peppers going. The rest was easy. The result, from Fat Free Vegan, was polenta lasagna. Very good, and very easy!

The recipe is listed under the Eat To Live section of FFV. I'm not sure it is strictly E2L, but it's close enough for me!! Here's the goods on polenta.

Here's my lasagna, along with the awesome sock monkey salt and pepper set my mom gave me for Christmas.


A closeup...I wish I was patient and took perfect food pics, but I was hungry. After coolling, this dish can be served in perfect little sections with the polenta intact (if you have willpower!).

Speaking of lasagna and rushing to eat instead of take pics....I made vegan lasagna for the first time ever 2 days ago...and forgot to take even one picture. How ridiculous is that? All that work and nothing to show for it. My hubby is happy because now he says I just have to make it again. ;-)

Your lasagna looks so delicious and rich and creamy, I love it! And those salt and pepper shakers are adorable.

Yum! I love polenta and I never, ever make it. Used to. But haven't in a long, long time. This looks like a great use for it. And the sock monkeys are cute as a button.
