After this debaucherous weekend in New Orleans, this week is all about healthy stuff. Here's a little salad I made up today. I've never mixed all these items and it was great!!
The ingredients are:
some tempeh cooked in veg broth and a few dashes of low-sodium soy sauce
spinach and romaine
light balsamic vinagrette
While in NOLA last weekend, I did eat one semi-healthy meal. It's called the Mardi Gras Indians and is a vegan or vegetarian (cheese shreds are easy to add/remove!) choice at Juan's Flying Burrito. These tacos are spicy and involve beans, squash, tomatoes, crunchy cole slaw, and maybe some magic! Definitely delicious!!
