Pizza Toast & Super Cool Cups!

Way back when, I posted about my honey's favorite snack, pizza toast. Now on Eat To Live, I've devised a healthier version of the white bread/cheese/meat extravaganza that's my husband's fave.

I started with Ezekiel sprouted grain bread. Next went on some no-added sugar sauce, a sprinkling of veggie meat crumbles, and a bunch of sauteed vegetables. We baked them, and ate up. Yum-tastic and very fairly healthy!!!


Here are the neat new coffee cups we bought this weekend. Fun, huh?

Going off meat wasn't to hard for me but how do you handle no cheese?

Boy Mom- I'm lactose intolerant, so cheese wasn't as big of a deal for me. It makes me really ill, so I was motivated to find other things to eat. Unilke lots of people, I really like vegan cheeses!! I also really enjoyed the recipes I've made from The Uncheese Cookbook (Stepaniak).

Those mugs are so cute!!!

Your pizza toast reminds me of the english muffin pizzas we used to make growing up. Then I made them a couple of times when my son was little and we used to make a tent in the living room and watch a movie eating muffin pizzas. I'm going to go get some spelt english muffins and make these. Thanks for bringing the memories back. yum!

Yum! Pizza toast! Of course, I'd cover mine with very processed vegan cheese and then it wouldn't be so healthy ... but tasty for sure. I love Ezekiel bread. And love those cups.

Boy that is a lot of coffee. The colors are awesome, so springy. I need some spring.

Thanks for the pizza spot. I have been using a lot of veggies in our meals. My hubby has been a good sport, the kids on the other hand.

So do you have to still prepare meats for your hubby?

Suz- I don't cook any meats. My husband makes some if he wants it, and generally gets his fix when we eat out. Keeps everyone happy, and he loves 99% of the vegan food I make. :)
