Today's recipe from the Self Magazine "Cook Once, Eat Healthy All Week" article is: Sweet Potato Shepherd's Pie.
It uses the building blocks, plus leftovers from the Adobo-Glazed Mini Turkey (in my case, veggie crumble!) loaves.
Humble looking, but healthy and delicious. I like how all these recipes make smaller dishes. It's just enough for two people for a few meals.
