Chili Yum Yum!

This has been a week of freezer meals. I am SO happy that I froze leftovers over the last few months. We are so busy with our store and the kidlets and the holidays in general, I am loving defrost-a-rific meals!

Here's last night's gem: Chili with brown rice, topped with fried onion strings! The chili itself is probably even an amalgamation of other leftover...whooohoo for recycling meals!

I freeze at least one or two servings of almost everything I make. And since I've been doing that, I've pretty much completely stopped buying frozen meals (except for Amy's vegan mac & cheeze cause it's awesome).

I love freezing chili, too! That and almost any type of soup, because it's SO awesome to have homemade soup ready on a chilly night when you're hungry and pressed for time!

I can't wait for a bigger freezer so I can do more of this! I've been running around lately and thus living on veggie burgers, pb&j, and takeout! I do often freeze soup when I make a big pot, though :-)

Lasagna! Or I like to make a big batch of sauce and save it.

I've never actually made chili before. I need to try that.
