Now it just occurred to me, isn't there some kind of stew called Hungry Man? Wonder if Sarah Kramer created a more vegan egalitarian soup for The Garden of Vegan!? Hehehe!
Whatever the case, this was a delicious recipe that was very easy to make. It calls for seitan, but we needed warm yummy food fast, so I subbed in some pintos that I has cooked and frozen a while back. I also added in some extra veggies to get it super thick.
Here's our meal with some gluten-free breadsticks. I topped the soup with Bac'uns veg bits for that authentic crunch. Yum!
