Gettin' Crunk in Memphis!

Hope everyone had a great Christmas...and hope yer in the process of having a great New Year's Eve. I'm writing this from the road- we traversed to Ohio from Louisiana this week for some family time. In the process I've eaten a load (can I get a veg witness!?) of mediocre veggie burgers, but there have been some *awesome* food and drink highlights.


We stopped in Memphis to record shop and meet up with Bianca from Vegan Crunk. As she writes in her post, we are deifnitely of the same ideology on all the awesome things in life! What's better than veg food and talking about cruiser bikes, music, lip balm, and saving the world? Nothing...except for maybe a margarita, but none of those while driving! Bernie's Bagels & Deli: cheap and deeelish bagels and snacks, bonus points for 1975-era basement decor
Wholly Craft: personal pink feminist crafty paradise times a million ( it was uber hard not to blow all my imaginary money in there)

Garden of Vegan: Hungry Person Stew!

Now it just occurred to me, isn't there some kind of stew called Hungry Man? Wonder if Sarah Kramer created a more vegan egalitarian soup for The Garden of Vegan!? Hehehe!

The Garden of Vegan: How It All Vegan Again!

Whatever the case, this was a delicious recipe that was very easy to make. It calls for seitan, but we needed warm yummy food fast, so I subbed in some pintos that I has cooked and frozen a while back. I also added in some extra veggies to get it super thick.

Here's our meal with some gluten-free breadsticks. I topped the soup with Bac'uns veg bits for that authentic crunch. Yum!

La Dolce Vegan: Spicy Nut Dressing

Today's post is on a very easy and yummy sauce from La Dolce Vegan: Spicy Nut Dressing.

I made a quick stir fry out of the frozen (bell peppers, cauliflower, mushrooms, broccoli) and fresh veggies (onions & garlic).

The sauce was a deeeelicous concoction and I highly recommend it!

Ingredients

DRESSING
3 tbsp Nut butter (I used pecan)
2 tbsp Veg stock or water
1 1/2 tbsp Rice vinegar
1 1/2 tbsp Tamari
1/2 tbsp Dark sesame oil (I used peanut)
2 tsp Sugar
1/4 tsp Cayenne pepper
Inch frsh ginger, finely grated

Ode to the Vegan Hoodie!

Behold, the vegan hoodie:

This unassuming hoodie is available from PETA for $40, should you so choose, but that is not the main idea of this here story. 

My hoodie story starts long ago, at least 7 or 8 years as I can figure it. I was a very excitable young vegetarian, and I wrote protest letters by the dozens. Imagine my delight when I got a letter published in a news paper. The PETA Street Team rewarded me with a hoodie! It has always been 2 or 3 sizes too big, but over the years, I have grown incredibly attached to it! It has outlasted several relationships, a car, multiple houses/apartments, and numerous jobs. It has stayed in rotation despite my freakishly frequent attempts at changing my style. 

A few weeks ago, the hoodie got misplaced. At first I was just annoyed and knew it would pop back up. Over  several days, my search gained intensity, until last night I was crying actual vegan tears of sadness! Where on earth was this serious (and seriously warm and comfy) piece of my life! We ransacked the cars and house one more time, just to find it bundled up and tossed over a closet door. RELIEF!! I had no idea how attached I was to this thing, but it's not leaving my sight again!!!

La Dolce Vegan: Cindy O's "Chicken" & Rice Soup for the Soul

Soup season! I found this little gem hiding out in La Dolce Vegan and gave it a try.

As far as fake meats go, making the "chicken" for this couldn't have been simpler or quicker. It wasn't the most exciting flavor or texture ever, but for the time and effort involved, it was just fine. (My husband did say, "What are these oyster thingies? They are chewy")- heheh.


Here is the "chicken" before dropping in the soup.


Simmering...it did have that fun homemade soup look and texture: 


 And the finished product...pretty tasty and verrry easy!

Almost No-Fat Dressing

A little over a year after I first embarked on Eat To Live, I am revisiting some of the basics. Last night I made a batch of Almost No-Fat Dressing from Bryanna Clark Grogan's The Almost No-Fat Cookbook. Here's the big vegetabley-beany salad I had! This dressing is very yummy and worth the slight effort to mix up.

Oil-Free Italian Dressing
From Bryanna Clark Grogan's "The Almost No Fat Cookbook."
First, make as much oil sub as you need for the amount of dressing you want to make (you can use this in other dressing recipes in place of oil, too):
Mix together in a small saucepan:
1 cup cold water or light vegetarian broth
2 tsp cornstarch

Cook, stirring constantly, over hight heat until thickened and clear. This will thicken even more when chilled, which is perfectly normal.

Use the oil sub here:
Oil-Free Italian Dressing (makes 1&1/3 cups)
Mix together in a covered jar:

1 cup oil substitute from the recipe above
1/4 cup red wine vinegar
1 Tbsp Dijon-style prepared mustard
1/2 Tbsp mild sweetener
1-2 cloves garlic, crushed
1 tsp salt or herbal salt
1 tsp dried basil
1/4 tsp paprika
pepper to taste

Chili Yum Yum!

This has been a week of freezer meals. I am SO happy that I froze leftovers over the last few months. We are so busy with our store and the kidlets and the holidays in general, I am loving defrost-a-rific meals!

Here's last night's gem: Chili with brown rice, topped with fried onion strings! The chili itself is probably even an amalgamation of other leftover...whooohoo for recycling meals!

Product Review: LaraBars

Today's post is a review of an awesome and healthy snack: LaraBars. 


All LaraBars are:
NON-GMO
GLUTEN FREE 
KOSHER
and most are:
DAIRY FREE
SOY FREE
VEGAN 

How's that for good stuff! LaraBars come in both fruity and desserty flavors and are perfectly portable. The Apple Pie is an old favorite (it's been a quick meal from my purse several busy times!). LaraBar graciously sent me some dessert-type bars for review, and I can verify that they are delicious as well! Nothing beats a big sugary dessert in my book taste-wise, but the yucky feeling afterward is something I can do without. These LaraBar cookie flavors actually satisfied my sweet-tooth and left me feeling good about what I ate.
