Shirataki Noodle Pie

Food, glorious fooooooood! Yay! It's in the 80's this week. I can turn on the oven!!!!

As usual, our dinner started with a big salad. This one has some almonds and raspberry hazelnut vinaigrette-yum!


Dinner was kale, brussels sprouts, and yummy Shirataki Noodle "spaghetti pie" from Hungry Girl: Recipes and Survival Strategies for Guilt-Free Eating in the Real World.

Thanks! Not a one in the house matches! I love to buy random pretty and artsy plates- the more colors of food and dishes at the dinner table, the better I like it :)

How did the noodle pie come out?? Was her recipe originally for shirataki noodles? I would have thought it wouldn't hold together well.

The noodle pie was tasty, but runny. Ok, but not anything magical. I had a few weeks of some naughty dabbling in dairy and used a fat-free egg sub. More on that un-fun divergance from my normal vegan eating coming soon on the blog :p

Oh- and yes, the whole Hungry Girl cookbook uses the tofu noodles. That was what drew me to it, but I think I'll stick to my regular recipes and just sub the noodles in.
