Eat Vegan on $4 A Day! It is really well-written, with great info on budgeting, advertising, health, culture, and more. The recipes aren't earth-shattering, especially if you are a pretty seasoned vegan eater. Nonetheless, the are all tasty, filling, healthy, and budget conscious. I love it! I've been cooking up lots of selections.
Here is the extremely tasty minestrone. It calls for 2 types of beans and a plethora of veg. Perfecto!
I added some quinoa as well.
