Say WHAT?! What’s the most ridiculous thing you’ve heard about health or your condition. Was there any context? What did you think at the time you heard it – and what do you think of it now?
I can think of a ridiculous thing I told myself...I figured out that I was lactose intolerant in high school. Due to little information and very traditional eating habits, I immediately jumped to the conclusion that I would just have to stuff those Lactaid pills in my mouth in mass quantities so I could continue eating favorite foods like pizza, ice cream, cheese, and so on without dying of cramps, upset stomach, and general bad tummy experiences. It took several years, a lot of reading, and a good amount of kitchen experimenting to learn what I should have guessed all along: I feel 100 times better when I just skip the dairy. I hate medications and I hate feeling bad, so I have learned how to eat exceptionally well without the presence of dairy in my life. Yay!
And here are some highlights of our after-Thanksgiving Potluck. On the menu:
enchiladas, mashed potatoes, red beans & rice, sweet potato biscuits, pasta, carrot cake cupcakes, key lime pie, and lots of wine! :p
