Mmm! This is one of my absolute faves from Sarah Kramer- she has the market cornered on cozy vegan food in my book! I want another plate of it just looking at these pictures :)This recipe is from the adorably portable Vegan A Go-Go, which I picked up at Herbivore in Portland long ago and far away. This little book travels well, calls for easily available ingredients, and is packed with great info and recipes. Love it!
I vary the pot pie filling based on what we have in the fridge. This one involved string beans, potatoes, celery, carrots, and onions. Soo delicious! The creamy filling and use of sage just create pot pie perfection. The crust is made with whole wheat flour.

This time of year I can't get enough quinoa pilaf. I make it with spinach, onion, garlic and dried cranberries. Perfect comfort food!
