Yummy Veggy Mexican Food

 Today we'll start with a very tasty meal put together from healthy, cheap, and quick ingredients! (And I'll also admit that my no-sugar plan lasted exactly 0 days...I am off the sauce though!)

Veggy taco/burritos! The corn tortillas are filled with clearance bin fajita veggies (score!). On Sunday, my day off (wheeeeeeeee!) I made the beans, which are red kidney beans cooked from dry, seasoned, and food processed. The quinoa is quick and delicious with some jar salsa poured in.

Now for the sweets! I am in love with Dickinson's Pumpkin Butter. 
I'm sure it's straight up sugar, but it makes me straight up happy :), especially on sprouted grain toast! Also pictured is Carrot Cake Granola- so good!

Ahhh yeah.

I'm having a self-imposed week with no drinking. I'm not a big drinker anyway, but I do love my wine. Taking a week off to clean out the system. I'm gonna take a break from sugar again as well. Watch out friends...cuz it might get ugly before it gets pretty! 

On the plus side, a clean week will prolly do wonders for Operation Abs!!

I am all sorts of excited about my latest reading project! I say project because it's a series of three books, all very dense, so it'll be a journey.

I received Sisterhood Is Forever for free through paperbackswap.com (love!) and started exploring it.

I learned that it's the third in a book series that spans over 4 decades! Sisterhood is Powerful, the initial volume,came out right in the heady times of the 1970's women's movement and, I've learned in my reading so far, is considered to be a highly influential book within feminism as well as a significant text to contemporary society as a whole.

The 2nd volume, Sisterhood is Global, took the explorations outside of the U.S. and examined women's experiences and actions around the globe.

I love exploring the writings of the feminist movement, and have tons to learn, so I am very excited to tap into Robin Morgan's books!

Green Power!


OK, with that out of the way...

I am enjoying working towards becoming a more consistent runner. It's slow going with temperatures in the 100's, so I am making sure to drink plenty of water. I am experimenting now with taking a little shot of coconut water with some greens powder before I work out.

I am using Zico coconut water, as I did a little research and found that it's the coconut water with the most electrolytes.

My greens powder of choice is Vitamineral Green. I like the capsules best, but don't mind the powder too much.

Polenta Two Ways

For some reason I am annoyed by the cooking world term "two ways" but I've decided to use it anyway ;p

I braved the heat and made some polenta from scratch this week. It's so delicious and versatile...it was worth turning the burners on!

First we had lovely polenta flowers on spinach! The red is marinara. This meal was so tasty, and really fun to put together, certainly smile-inducing!

The next dinner, we had some homemade vegan chili (from the freezer) and faux sour cream with cumin on top. 

Viva polenta!!

So ready...

for some decent weather. It has dropped from the 100's to the 90's, so that's progress. Still no major cooking at the moment...no way am I turning on the oven or stovetop for long! 

Cobbled together meals rule at the moment, especially microwave or raw ones...

I tried Sunshine Patty's falafel version- my response is rather lukewarm. It was just kind of blah...but it did fill the belly! 

We also tried Bird's Eye Steamfresh Chef's Favorites Mushroom Risotto. On occasion, I get to try new products through Foodbuzz's Tastemaker program. The products are generally vegetarian or vegan, lucky for me :)

The mushroom risotto, much like the falafel patty, was just ok. No big excitement, but not bad in any way. I was pleased that it was low fat and fairly low calorie as well. I'm not big on packaged food, but in a pinch I like these frozen veggie type dishes to round out a meal quickly. 

And for dessert, as usual this summer, my variations on banana soft serve. I am loving cocoa & peanut butter as mix-ins! Chilly and deeeelicious!

Tea & bubbles!

Newsflash: still HOT HOT HOT. No turning on the oven until further notice...

I've been making yummy teas and bottling them up to drink during the day. This one is a loverly rose and mint blend from my local Spice & Tea Exchange.

And just a peek at some pretty birthday bath time treats I received from Whipped Up Wonderful on Etsy (the bath bomb is smooshed on purpose...I clobber them and sprinkle it in a little at a time to make them go further!) The cupcake soap smells amazing! Thanks, Amanda!

Fitness Blahs...

Yeesh...I think it may be the three digit temps getting to me! The idea of exercise has been repulsive the last few days, but I've managed to at least do some strength stuff and a little cardio. I am enjoying Jennifer Galardi's workouts on Exercise TV.

No fancy meals these last few days...just light cool treats!

More vegan softserve...I am playing with variations to the basic 2 bananas/1 cup of non-dairy milk base. I added peaches and cinnamon and it was deeelicious!! I'm still in love with the coconut oil & raw cacao powder "magic shell" topping.

Fresh homegrown tomatoes and basil make a great cool snack as well...

More dessert! Softserve topped with I Heart Wellness's Trailblazing Power Cookies- love!!!

Colorful eats!

 Lots of running, Jillian Michaels' Fitness Ultimatum for Wii, and healthy eating! 

Below is a pasta salad based on a Livestrong.com recipe, basically veggies, pasta, and red wine vinegar. Very tasty!

Next up is a yummy taco/burrito thing filled with tofu and sauteed veggies. 
Dessert, courtesy of my bestie in Portland! The idea of five-spice brittle really threw me off, but it is super yummy and fairly addictive!

Making Popcorn!

In one of my favorite movies ever, Singles, "making popcorn" is a euphemism for getting a little booty. 

Here, for the moment at least, I'm talking the real thing...kernels to popcorn, homemade!

My honey is a popcorn-making expert! He got us on track with three test kernels in the oil. 


We tried all different sorts of seasonings. I made some garlic nooch flavor and some cinnamon flavor. 

Tasty! I gave myself a tummy ache eating substantial amounts of this stuff!!
