Plant-Strong Prep!

Gaze into my murky depths!!! This mysterious dark liquid is hiding some of my food prep for the week..

Beans soaking!! 


I soak at least a couple of different types of beans overnight at the beginning of the week to make food prep easier. Also, if beans are ready, I'm much more likely to add them to dishes like salads, soups, etc. 


Pre-hummus!!


What are your must-have food prep activities?

I soak my beans to (when I remember!). But you're right - I'm more likely to use beans if they are ready to go. I love having cooked brown rice already made in my fridge - I can make burritos, scrambles, and stir fries in a snap!

We always have beans soaking in some form or another - chickpeas, black beans, and borlottis once a week or so, and we virtually always have soy beans soaking in the fridge, so we can make milk whenever we run out.
